When you work in an office from 8 to 5 (or whatever your hours happen to be) lunch is the last thing you want to fuss over, right? Let me guess, you normally forget to make a lunch the night before, run out of time in the AM, and grab some fast food when lunch time rolls around. And I’m sure you know that I’m going to tell you why this is a terrible habit you’ve gotten yourself into. You’re wasting your money on overpriced food (trust me, it adds up) and you’re filling your belly with junk which will only make you feel sluggish for the rest of the day, decreasing your productivity and increasing your stress levels.
You don’t have to be a meal prepping freak like so many health nuts out there. Here’s a ridiculously easy lunch that you can throw together in 2 minutes (or less) that tastes amazing and is a healthier option compared to the typical sandwich. I call em ham rolls and they are to die for! Here’s how to make them:
- Deli ham slices
- Cream cheese (flavor of your choice or plain)
- Green onions (optional)
- Fresh spinach
Step 1: Chop up green onions & mix into cream cheese. If you get flavored cream cheese, skip this step.
Step 2: Lay out ham slices. 4-6 is probably a good amount for lunch.
Step 3: Smear on cream cheese. It might be difficult to spread with a knife but your fingers work great!
Step 4: Put a few pieces of spinach on top.
Step 5: Roll up and enjoy!
This has got to be the easiest lunch in the world but it’s so yummy! You have a few options when preparing it for lunch. You can either make a bunch to last the whole week, make just enough for lunch the night before or morning of (it only takes a few minutes so why not?), or you can throw all ingredients into your lunch box and make right before you eat. I can also see these being a great snack to bring to an office party 🙂
